Such components may be separated from the miraculin containing material by utilising the lower density of the degrading components compared with that of the miraculin containing phase. In one form, depitted ripe fruit is comminuted, either within 10 hours of picking, or at any time after picking provided that the fruit has from picking been kept at less than 0‹C, and the miraculin is separated therefrom. A frozen solid such as carbon dioxide may be present to keep the temperature down during comminution. The depitted fruit may be frozen to less than -50‹C prior to comminution. Liquid and vaporous components may be removed by lyophilisation. Alternatively the ripe depitted fruit may be frozen, comminuted, dehydrated by lyophilisation to below 5wt% moisture, further dessicated to remove residual moisture, and the miraculin recovered from the dried fruit, freezing, comminuting and dehydrating being effected at less than -40‹C. The product may be tabletted.
