摘要 PROBLEM TO BE SOLVED: To obtain a coating for a fried food, having crispy texture, extremely improve texture of coating, not deteriorate the texture even if the food is cooled and to extremely improve the texture of the coating. SOLUTION: This wheat flour is useful for a fried food to be reheated by a microwave oven, contains a starch substantially not pregelatinized and has 80-92 gluten vitality when untreated wheat flour has 100 gluten vitality and 105-155 degree of swelling of gluten when untreated wheat flour has 100 degree of swelling of gluten. The wheat flour is produced by heat-treating wheat flour with saturated steam in a high-speed stirrer of closed system for 2-20 seconds retention time at >80 deg.C and <=92 deg.C under pressure.
