<p>In the clarification of finished wort by settling the sediment and decanting the clarified wort, then cooling this, the improvement comprises pumping away the settled sediment during decantation and centrifugating this and cooling the residual wort recovered in this way together with the decanted wort. The claims also cover the equipment used. The process is shortened and/or the wort yield is increased. The equipment includes a conveyor pump connected to an outlet in the middle of the bottom of the run-out vessel; a centrifuge between the pump and the cooler; and a rotary tanks as run-out vessel.
