摘要 PROBLEM TO BE SOLVED: To obtain an additive for beverage and food products which comprises a fermentation mixture containing organic acids, alcohols and salt in a specific proportion and give meat that has a good taste and flavor intrinsic to meat after cooking with soft texture and can be eaten with rich broth. SOLUTION: Soybeans are boiled and washed with water until the total amount of the saccharides and protein in the soybeans reduces down to 90wt.% of the original amounts. Then, thermally modified carbohydrate is mixed with the boiled and washed soybeans. Further, salt and water are added to the mixture and they are made into a koji (saccharification of carbohydrates) and brewed to prepare the objective food additive comprising fermentation liquid mixture containing 2.0-5.0wt.% of organic acids, 3-10wt.% of alcohols, 10-16wt.% of salt.
