The invention regards the device for fruit and vegetable drying in vacuum, and consists of: drying chamber (1), secondary steam condenser (2), condensate recipient (3), separator (4), vacuum forechamber (5), vacuum pump (6), measuring and regulatory means, creating thus a structural unit. The device can be operated by manual, semi-automatic and automatic controls. The power fuel can be: electric current, solid and liquid fuels as well as gas. The device according to this invention can be made of standard steel, of capacity from 100 kg to 20 tons. The device according to this invention is particular because a thermosensitive product can be dried in it, by keeping the quality of the dried product approximately close to the one of a crude product. The device can be manufactured as a movable unit for the private sector, as mini-dryer, and as an industrial plant for greater capacities. |
