LACTOBACTERIA STRAIN CONSORTIUM AND A METHOD FOR THE PRODUCTION THEREOF BASED ON A PREPARATION USED IN THE FORM OF A BIOLOGICALLY ACTIVE ADDITIVE OR A STARTER FOR PRODUCING SOUR-MILK PRODUCTS

The invention relates to biotechnology. The inventive lactobacteria strain consortium for producing liquid biologically active additives and healthful and dietary sour-milk products comprises Lactobacillus acidophilus 57S (deposited in the VNII genetica in the All-Russian Collection of Industrial Organisms B-5863), Lactobacillus plantarum P-75 (deposited in the VNII genetica in the All-Russian Collection of Industrial Organisms B-3962) and Lactobacillus casei Sb (deposited in the VNII genetica in the All-Russian Collection of Industrial Organisms B-5724) which are taken in a quantity of 2:0.5:0.5. The inventive method for producing the preparation used as a biologically active additive or a starter involves the preparation of a milk nutrition medium, the sterilisation and cooling thereof to a fermentation temperature and the introduction of the seed dose of the above-mentioned lactobacteria strain consortium in a quantity not more than 5 mass%. The fermentation of the product is carried out during a time which is sufficient for a curd formation and the cooling is carried out at a temperature equal to or less than +6°C. Skim milk which is normalised in terms of MSNF up to 13.5-15.0% is used as a milk nutrition medium. Lactopeptone and sodium citrate are also added to the medium at the following component ratio: 3.5-4.5 mass % lactopeptone and 0.15-0.25 mass % sodium citrate, the rest being the skim milk normalised in terms of MSNF up to 13.5-15.0%.
