A process for preparing Kimchi contg. ginseng comprises (a) soaking chinese cabbage in water-contg. 10-20% salt for 6-8 hrs and dehydrating to obtain the soaked and dehydrated cabbage (I), (b) mixing 10-30 wt.% cut ginseng, cut vegetables (e.g. radish, green onion, dropwort, etc), pickled shrimps, salted anchovies, red pepper powder, etc to obtain the Kimchi spice contg. ginseng (II), and (c) mixing 70-90 wt.% (I) with 10-30 wt.% (II) to obtain the final product. The Kimchi contg. ginseng has a good taste and flavour. |
