<P>PROBLEM TO BE SOLVED: To provide a pasty food raw material which is easy to process, while bean curd refuse and konjak are bound to each other, without separating, and from which emission of konjak odor does not occur, and to provide a method for producing the food raw material. <P>SOLUTION: The pasty food raw material is obtained, by kneading bean curd components, konjak components, gluten and water together without addition of a coagulant without adding coagulation agent: wherein 10-60 pts.mass of the gluten is added in 100 pts.mass of the total of the bean curd components and the konjak components. The pasty food raw material is produced, by adding gluten and bean curd powder into a mixture of water and konjak powder and kneading the mixture until the mixture becomes thicker. <P>COPYRIGHT: (C)2009,JPO&INPIT |
