The invention relates to the production of fermented food preparations, comprising an ageing or fermentation step of a mixture of cellobiose and pieces of slaughtered or hunted warm-blooded animals to be eaten by humans, as well as to the products resulting therefrom. Also described is the use of cellobiose as an auxiliary agent (as a lactose substitute) in the fermentation of meat and sausage products.
