摘要 PURPOSE:To obtain a quinone-dependent glucose dehydrogenase useful e.g. for the determination of glucose in food, free from ready release of pyrroloquinolinequinone used as a coenzyme and capable of getting an electron acceptor from a practical compound having no or short isoprene side chain. CONSTITUTION:This quinone-dependent glucose dehydrogenase is produced by culturing a microbial strain belonging to the genus Acetobacter such as Acetobacter aceti IFO 03284, Acetobacter pasteurianus IFO 03222 and Acetobacter xylinum IFO 13772 (ATCC 10245) and has the following properties. (1) The optimum pH is 3.0 in the case of using glucose as the substrate and potassium hexacyanoferrate as an electron acceptor and is 6.5 in the case of using phenazine methosulfate and indophenol as electron acceptors, (2) the optimum working temperature is 10-30 deg.C, (3) it leaves about 50% of activity after the treatment at 37 deg.C for 10min and (4) the molecular weight is about 88,000 by SDS-polyacrylamide electrophoresis.
