PROBLEM TO BE SOLVED: To provide a method for cooking a fish boiled with soy for a packaged product without hardening fish meat and without clouding a seasoning liquid. SOLUTION: This method for cooking a fish boiled with soy for a packaged product comprises a steaming step, a stuffing and liquid injecting step, a hermetically sealing step and a cooking and sterilizing step. The steaming step is to carry out steaming of fish meat after removing the head or viscera at an atmospheric temperature of preferably >=80 and <=90 deg.C, more preferably >=85 and <90 deg.C in a short time of about 1 min. In the stuffing and liquid injecting step, the stuffing of the fish meat after completing the steaming step in a container having airtightness and liquid injection of a seasoning liquid are carried out. In the hermetically sealing step, the container after carrying out the stuffing of the fish meat and liquid injection of the seasoning liquid is hermetically sealed. In the cooking and sterilizing step, the hermetically sealed container is heated to thereby perform the thermal cooking and thermal sterilization of the fish meat in the container. |
