<P>PROBLEM TO BE SOLVED: To provide a device for producing a food-gel molded body which can be placed at a kitchen of a restaurant or the like, and can immediately restart production of the food-gel molded body even when the production of the food-gel molded body is optionally stopped. <P>SOLUTION: The device for producing a food-gel molded body is provided with a mold group set at the lower part of a dissolution tank 10 where sol solution for food is prepared and comprising a plurality pieces of vertical molds 42, a cooling means 40 cooling the sol solution charged in the molds 42 whose discharge port is blocked by an opening/closing means to form a food-gel molded body; an automatic valve 34 set in the middle way of a supply nozzle pipe 32 extended from the dissolution tank 10 to the molds 42 so as not to cause liquid pool of the sol solution; and a washing means washing the dissolution tank 10, the automatic valve 34 and a supply nozzle pipe 31 with boiling water within the time when the residual sol solution is not gelatinized when preparation of the sol solution in the dissolution tank 10 is paused. <P>COPYRIGHT: (C)2008,JPO&INPIT |
