摘要 PROBLEM TO BE SOLVED: To provide the noodles that can retain a lump form after the noodles are moisturized with cold or hot water or even when they are served after being boiled or cooked. SOLUTION: This process for producing noodles comprises (a) the step for coating the noodle lines with a protein material having the heat coagulation properties on their surfaces as a binding agent, (b) the step for coating the noodles treated in the step (a) with an alkali metal salt and/or an alkaline earth metal salt on their surfaces as a coagulating agent, at the same time as the noodles are treated with the binding agent or before or after the treatment of the binding agent and (c) the step for heat-treating the noodles coated with the binding agent in the step (a) and the coagulating agent in the step (b).
