<P>PROBLEM TO BE SOLVED: To provide a coating oil-and-fat composition getting rapidly dry at operation temperature (5-25°C) and hardly causing cracking or sweating even if time passes even when the composition is coated just after baked in production of layered food typified by danish pastry or croissant. <P>SOLUTION: The coating oil-and-fat composition is such that oil and fat contains ≥25 wt.% of SSO-type triglyceride as a main component. The oil-and-fat content in the coating oil-and-fat composition accounts for 25-75 wt.%. The composition is prepared for coating bread, baked confectionery, western-style confectionery or frozen confectionery, preferably for coating the layered food typified by the danish pastry or the croissant. <P>COPYRIGHT: (C)2008,JPO&INPIT |
