摘要 The present invention relates to a method for preparing mascarpone cheese which: remarkably reduces harmful factors which may occur in preparation steps and increases productivity by minimizing processes manually performed when preparing the mascarpone cheese and by shortening process steps and time consumed therefor; and prepares most of raw materials into curd, that is cheese, without producing whey, and thus has high yield, thereby reducing production costs. To this end, the method for preparing mascarpone cheese comprises: a cheese raw material mixture preparation step of adjusting fat content in a solid content to be 75-90 wt% by adding 20-40 parts by weight of butter with respect to 100 parts by weight of milk cream; a liquid cheese composition preparation step of heating the mixture of cheese raw material mixture at a temperature of 70-95°C; an organic acid mixing step of adding organic acid to the heated liquid cheese composition, and stirring the same; and a stabilizer mixing step of adding a stabilizer to the heated liquid cheese composition to which the organic acid is added, and stirring the same.
