The present invention relates to a method for preparing salted mackerel fillet, by obtaining a Ledebouriella seseloides concentrate from the ethanol extraction of useful ingredients, exhibiting anti-oxidative and antibacterial effects, from the whole plant of Ledebouriella seseloides; adding the Ledebouriella seseloides concentrate to salt water using alkali ion water to prepare a wet salt treatment liquid; and then salting mackerel with the prepared wet salt treatment liquid. According to the present invention, the use of the useful ingredients of Ledebouriella seseloides can suppress the occurrence of acidification, corruption, or fishy smell, thereby improving preservability; can cause no change in the color of the salted mackerel fillet, thereby showing excellent appearance; can suppress the change in the meat texture and the loss of taste compounds during the freeze storage, thereby maintaining distinctive taste and texture of the mackerel. |
