Starch hydrolysate of D. E. is not >18 is made by heating a starch slurry either with acid (pref. at 100-160 degrees C) or with alpha-amylase (pref. at 92-95 degrees C and pH 6.5-7.5) to give a first product D. E. is not >3 and free from starch grains. - This is then treated with bacterial alpha-amylase at 65-85 degrees and pH 7-9 (pref. 74-80 degrees C and pH 7.5-8.5) and the hydrolysis finally checked by acidification. The product has D. E. 8-18, glucose 1%, maltose 6% and high transparency.
