PURPOSE:To prepare polished brown rice gruel having high nutrition and excellent taste, flavor and digestibility by filling and sealing polished brown rice and water at a specific ratio in a container such as can, bottle or bag and pressurizing the content at a specific temperature. CONSTITUTION:Brown rice is polished to an extent to remove about 1% of the rice (5% of the seed coat, perisperm, etc.). The remaining polished brown rice and water are filled in a container (e.g., can, bottle or bag) at a ratio of 1:7, sealed and pressurized at 102-107 deg.C for 35min to obtain the objective polished brown rice gruel. |
