<P>PROBLEM TO BE SOLVED: To provide fish fermented paste obtained through utilizing such a technology as to be relatively easy to make efficient use of unmarketable fish and shellfish or process residue generated in a process of fish processing almost of which are wasted up to now. <P>SOLUTION: The method for producing the fish fermented paste obtained by using fish and shellfish raw material composed of at least one of the fish and shellfish and the processing residue of the fish and shellfish, comprises a crude fat elimination process where crude fat is eliminated from the fish and shellfish raw material; a mixing process where the fish and shellfish raw material is mixed with rice malt and salt; and a fermentation process where the mixture is fermented. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
