PURPOSE: Provided is a manufacturing method of health enhancing rice-beer using red and black rice instead of barley. The rice-beer maintains the taste and flavor peculiar to original beer and satisfies consumer's preference. CONSTITUTION: The manufacturing method of health enhancing rice-beer is characterized the steps of: soaking individually glutinous rice, black rice and red rice in water; drying them after their sprouting; roasting and pulverizing them; mixing the powders with base rock water as brewing water; then meshing the mixture to form a malt solution. |
