FIELD: fish industry. SUBSTANCE: this relates to fish processing industry and can be used in processing of fish broth, brines, fats. According to method, liquid to be deodorized is passing through layer of chitosan which is preliminarily is wetted with water and washed with disinfecting liquid. Application of aforesaid method restores fresh flavor of liquid being processed and intensifies it, and also simplifies process, cuts its duration with excluding smell of disinfection in liquid being deodorized.
