PURPOSE: A method of reducing a moisture content of agricultural, animal and fishery products is provided. It improves the good storage and processing of the products without a breakdown in a cell or tissue while maintaining the nutrients, flavors and colors as it were. CONSTITUTION: The method of reducing a moisture content of agricultural, animal and fishery products having a moisture content of 85% or more comprises the steps of: treating a raw material for 180min at low temperatures of 7 to 15deg.C to reduce its moisture content to 65 to 70% in the first stage; treating it for 180 to 240deg.C at intermediate temperatures of 50deg.C to remove harmful materials being decomposed at the low temperatures of 7 to 15deg.C while reducing its moisture content to 55 to 60% at the same time; treating it for 120min at 5deg.C to stabilize a tissue while aging the raw material. |
