The tubular heat exchanger (2) has a casing tube (18) and a heat transfer tube (6) which is arranged in the interior of the casing tube. A food course is guided in the heat transfer tube, where the food course and another food course are separately guided through an end section (1) of the tubular heat exchanger. The end section has a through-hole which is in a fluidic connection with a heat transfer tube. The end section has another through-hole (15) which is in fluidic connection with an enclosing chamber (4). Independent claims are included for the following: (1) a dual deflection path for a tubular heat exchanger; (2) an adapter for a tubular heat exchanger; (3) a system for heat transfer between two food courses; and (4) a method for heat transfer between two food courses.
