The following are claimed: (1) wild garlic (Allium ursinum), esp. as a seasoning, characterised in that large leaf pieces to whole leaves ('Spreiten') are freeze-dried; (2) use of wild garlic as above as a seasoning for foodstuffs; (3) use of wild garlic as above for reducing the NaCl content of salted foodstuffs, esp. sausage; (4) use of growth-inhibiting substances contained in wild garlic after freeze-drying for inhibiting the growth of germs entrained by wild garlic in foodstuffs seasoned with it; (5) a process for preparing wild garlic as above, in which whole leaves are frozen and freeze-dried, the leaf temp. being held <35 degrees C, esp. <30 degrees C. |
