PROBLEM TO BE SOLVED: To provide an excellent antiinflammatory agent and a food for the prevention and amelioration of inflammation by effectively using citrus fruits.

SOLUTION: The antiinflammatory agent and the food for the prevention and amelioration of inflammation contain a water-insoluble material obtained by a method containing a step to crush a citrus fruit, a step to treat the crushed material with water and a step to remove the aqueous layer of the water-treated material.
