PROBLEM TO BE SOLVED: To provide a process for efficiently preparing a substituted amino acid Schiff base compound (3) shown below with industrial advantage which is useful as an intermediate for producing drugs, agricultural chemicals and the like. SOLUTION: The process for preparing the substituted amino acid Schiff base compound (3) (wherein R<SP>1</SP>is a 1-8C alkyl group or the like; R<SP>2</SP>is a 1-8C alkyl group or the like; R<SP>3</SP>is a 1-8C alkyl group or the like; Ar is an aryl group or the like; and R<SP>4</SP>is a 1-8C alkyl group) comprises reacting an amino acid Schiff base compound (1) (wherein R<SP>1</SP>, R<SP>2</SP>, R<SP>3</SP>, and Ar are the same as defined above) with a compound represented by formula (2) (wherein R<SP>4</SP>is the same as defined above and L is an elimination group) in the presence of an alkali metal hydroxide or the like and a crown ether. In this instance, when an optically active quaternary ammonium salt is allowed to be present, an optically active substituted amino acid Schiff base compound (3) can be prepared.
