PROBLEM TO BE SOLVED: To provide a method for producing ajoene-containing oil and fat in which ajoene can efficiently be produced.SOLUTION: Provided is a method for producing ajoene-containing oil and fat in which, characterized, in a mixture comprising garlic bulb or a juice thereof, oil and fat, and niacin, ajoene is formed in said oil and fat; said oil and fat preferably is medium chain fatty acid triglyceride; the temperature of said mixture preferably is in a range of 0 to 50°C; and said mixture preferably is produced by mixing said garlic bulb or a juice thereof and the niacin, by agitating, followed by adding said oil and fat.SELECTED DRAWING: None |
