PURPOSE: Red ginseng tofu with the improved storage property, and a producing method thereof are provided to offer fractions of a red ginseng ethanol extract to the tofu. CONSTITUTION: A producing method of red ginseng tofu comprises the following steps: preparing an extract obtained by extracting red ginseng using water or alcohol, or a fraction obtained by dividing the extract with an organic solvent selected from methanol, ethanol, ethyl acetate, dichloromethane, butanol, or hexane; and inserting the prepared extract or the fraction into soymilk.
