The present invention provides a method for extracting anthocyanin, a natural dye, from blueberries, comprising a step of adding an extraction solvent to crushed blueberries and performing a reflux cooling method or a shaking extraction method on the crushed blueberry, and a food composition comprising anthocyanin, a natural dye, extracted thereby as an active ingredient. The method for extracting anthocyanin, a natural dye, from blueberries and the food comprising anthocyanin thereby have effects of: providing a large amount of anthocyanin, a natural dye; and solving changes in pigmentation and enhancing stability of pigmentation during a processing process so as to be used effectively in the food processing industry. |
