<P>PROBLEM TO BE SOLVED: To provide a coating oil-and-fat composition with which bakery food containing nuts and seeds and/or dry fruits having no mealy palate feeling, the smooth surface, and homogeneously dispersed nuts and seeds and/or the dry fruits, is produced. <P>SOLUTION: The coating oil-and-fat composition has ≥10% of solid fat content (SFC) at 35°C and ≥3% thereof at 40°C in its oil phase, and the nuts and seeds, and dry fruits coated with the coating oil-and-fat composition are used for bakery dough. <P>COPYRIGHT: (C)2009,JPO&INPIT |
