摘要 <P>PROBLEM TO BE SOLVED: To provide a bubble-containing chocolate having satisfactory foaming properties, shape-retaining properties, texture and melting properties, and an oil-and-fat composition suitable for the production of the bubble-containing chocolate. <P>SOLUTION: The oil-and-fat composition satisfies the following conditions (a) to (c). (a) The content of S3 triacylglycerol in the whole triacylglycerol is 0.5-10 mass%; (b) the content of PU2 triacylglycerol in the whole triacylglycerol is 15-45 mass%; and (c) the content of U3 triacylglycerol in the whole triacylglycerol is 10-55 mass%. <P>COPYRIGHT: (C)2013,JPO&INPIT
