摘要 <P>PROBLEM TO BE SOLVED: To provide soybean milk that does not substantially cause allergic reaction upon drinking the same, and a method for preparing the same. <P>SOLUTION: The method for preparing low-allergen soybean milk comprises a first process of treating soybean milk with protease and a second process of preparing cyclodextrin clathrate of the soybean milk having been treated with protease. The first process of treating soybean milk with protease is carried out so that the allergic reaction with respect to the soybean milk obtained by the second process becomes negative by the following allergic reaction test: detecting Gm30K in soybean milk by virtue of a sandwich ELISA method. A sample tested is determined negative with respect to allergic reaction if the amount of Gm30K detected thereby is 5 ng per 100 &mu;l of soybean milk. <P>COPYRIGHT: (C)2008,JPO&INPIT
