<P>PROBLEM TO BE SOLVED: To provide an acidic oil-in-water emulsified food which is reduced in the blended quantity of edible oils and fats and is reinforced in egg yolk flavor. <P>SOLUTION: The acidic oil-in-water emulsified food contains 10-60 wt.% of edible oil and fat, a thickener and egg yolk, and has a viscosity (at 20°C) of 80 Pa s, where a trans acid content accounts for 0.2-5 wt.% of edible oils and fats, and part or all of the egg yolk includes lysed egg yolk. The transmissivity (wavelength of 660 nm and optical path length of 10 mm) of a filtrate, obtained by filtering a 300 times diluted aqueous solution of the acidic oil-in-water emulsified food in its emulsified condition, through a filter having a pore size of 0.2 μm is 98 mass% or higher, and the transmissivity (wavelength of 660 nm and optical path length of 10 mm) of the 300-fold diluted aqueous solution of the food in its emulsified condition is 7-18 mass%. <P>COPYRIGHT: (C)2009,JPO&INPIT |
