A cab tilting device of cab-over vehicles is provided to prevent a driver from being bumped against front glass or being rushed to the outside in case of a head-on collision. A cab tilting device of cab-over vehicles comprises: a cab(140) whose one side is hinge-combined with one side of a frame(120) by a cab tilting shaft(110) and the other side is connected to the other side of the frame by a hydraulic cylinder; and a length variable unit to move the cab tilting shaft upward in case of collision. The length variable unit consists of: a guide rail with the frame; a collision part(153) sliding along the guide rail in case of collision; a sliding rod(155) whose one side is hinge-combined with the collision part and the other side supports the cab tilting shaft; and a guide rod(157) to support the sliding rod.
