Assembly has a transfer mechanism, to invert the twisted pretzels by 180 deg. to be laid on the conveyor belt, using a number of freely rotating stationary rollers, with their axes parallel to the deflection roller axis and at a gap, with an adjustable gap to the upper surface of working platform. The thin rollers (13) are metal tubes, with each of their two ends engaging in a bearing, with an adjustable (14) gap from the deflection roller axis. The thin rollers are coated with a non-stock material. A positioning unit, between the shaper and the limit stop of the fed dough strand, has two straight limit bars, at right angles to the movement direction on the working platform, on both sides of the curved limit stop (16), so that the theoretical connecting line between their longitudinal axes forms a tangent to the peak of the limit stop towards the winding of the fed dough strand, with a gap between the tangent line and the limit (16) peak. The positioning unit can be a rotating roller (20), on an axis at right angles to the direction of movement of the working platform (1), and at a gap over it, with projecting blades (25) at right angles to the roller axis to extend close to the working platform (1) and with a width matching the platform (1) width. The rotating roller (20) can slide in the direction of the working platform (1) movement, with height adjustment, USE/ADVANTAGE - Used for the prodn. of pretzels from shaped dough strands. Structure reduces space required for equipment, with improved transfer reliability for wound pretzel dough, to increase number of pretzels produced within given time span, and reduce wastage through faulty working.
