Also claimed is a dough (I) for a bread for comprising (units by wt.): 100 rye flour T130, 300 wheat flour T55, 200 dry wheat gluten, 100 non-deoiled soya flour, 300 very fine wheat bran, 900 water, 20 table salt, 25 fresh baker's yeast and 300 fermented dough.
