摘要 PURPOSE: Provided is a manufacturing method of whale shaped bread which provides the characteristic taste and flavor meeting consumer's appetite and has dark brown color by using cocoa powder. CONSTITUTION: The manufacturing method of whale shaped bread comprises the steps of: heating 36% of red-beans and 39.7% of water in a heating container at 100deg.C for 1 hour; adding 15% of brown sugar, 0.1% of steviten, 9% of wheat flour, 0.01% of salt, 0.001% of a caramel coloring agent and 0.1% of cocoa powder thereto then heating them at 40deg.C for 30 minutes to prepare the filling of bread; preparing bread dough by using 37% of wheat flour, 54.5% of water, 5% of margarine, 0.835% of milk powder, 0.334% of baking powder, 0.117% of soda, 0.68% of cocoa powder, 1.244% of glucose, 0.284% of salt, 0.01% of steviten, and quantified water and flour; and stuffing the filling into the bread dough in a frame then baking them.
