<P>PROBLEM TO BE SOLVED: To provide a method for producing dry fruits and vegetables by which dry fruits and vegetables are obtained without spoiling colors, nature and quality, flavor and nutrients; and to provide dry powder of the dry fruits and vegetables. <P>SOLUTION: The method for producing dry fruits and vegetables comprises irradiating fruits and vegetables each having a high water content at 60-80°C far with infrared rays in the presence of graphite silica to dry the fruits and vegetables. Such process results in satisfactorily suppressing spoilage of the fruits and vegetables, and controlling the drying temperature within a specific range results in preventing deterioration or spoilage of the fruits and vegetables. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
