1478493 Coating cakes or pastries BISCUITERIE LE COLIBRI 25 July 1974 [26 July 1973] 32802/74 Heading A2A An apparatus for coating cakes or pastries comprises a head 10 having a housing 11, the upper portion thereof being connected to a conduit 12 which is connected to a vacuum source. Nozzles 15, whose openings 16 are surrounded by lips 17, are aligned with perforations 14 in the base 13 of the housing 11. Means 19 are provided to vibrate the head 10. The head 10 is positioned above a tank 21 containing chocolate 22 in semi - liquid form. In use cakes 32 are arranged on the upper surface 33 of a plate 31 and the head 10 is lowered and then raised so that the cakes 32 are held by the reduced pressure within the head 10. The plate 31 is then removed and the lower portions of the cakes 34 are brought into contact with the chocolate 22. The head 10 is then vibrated to remove excess chocolate. A plate 24 with moulds or impressions is then placed on the tank 21 and the head 10 lowered so that each of the cakes with its chocolate covered surface comes into contact with the mould to imprint on the soft surface of the chocolate the characteristic lines of the mould e.g. a madeleine cake mould. |
