FIELD: food industry.SUBSTANCE: invention relates to production of kvass. Method envisages preparation of recipe components, cutting of rye bread, cutting of girasol, its drying in a microwave field till the residual humidity of about 20 % at a microwave filed power providing warming of girasol inside the bits till the temperature of 80-90 °C during at least 1 hour, frying and crushing, the listed components mixing with black-currant leaves, sugar and boiling water, maintaining for 3-4 hours, separation of phases, addition to the liquid phase of beer yeast , fermentation and boiling for 5-7 minutes.EFFECT: method enables to reduce duration of technological process and stabilize colour of end product.1 cl |
