FIELD: chemical industry. SUBSTANCE: method comprises hydrolysis-extraction of pectin-containing vegetable stock, separation of extract, recovery of pectin therefrom with alcohol or acetone, separation thereof, washing with alcohol or acetone and removal of alcohol or acetone from the desired product by washing it with liquid mixture of carbon dioxide and acetylene at 3:7 to 7:3 weight ratio, at pressure higher than atmospheric pressure followed by pressure drop to atmospheric pressure. EFFECT: smaller alcohol or acetone losses.
