Sensor device allowing measurement of the degree of humidification of a mixture such as concrete mortar for example. It consists in the combination of two fixed sensors 2 and 3 mounted on the body of the enclosure 1 and a probe 4 which dips into the mass of the mixture, the measurement being carried out between the said fixed sensors and the dipping probe, through the mixture. The probe 4 may be of the rotating contact type constituted by mercury and compatible metals in order to ensure highly reliable rotational connection. <IMAGE>
