PURPOSE:To prevent the precipitation of soybean protein and obtain the titled aqueous solution with increased Ca content, by adding endopeptidase to an aqueous solution of a specific soybean protein, treating the solution, and adding and homogenizing a Ca salt therewith. CONSTITUTION:An aqueous solution of soybean protein denatured by heating at 85-140 deg.C for 1hr-5sec or adjusted to >=10pH with NaOH, etc., denatured with the alklai and adjusted to 6-8pH, and 0.1wt%, based on the soybean protein, endopeptidase is added to the resultant aqueous solution and stirred at 25-95 deg.C for 120-1min. A Ca salt, e.g. CaCl2, in an amount to give 10-50mM Ca concentration in the above-mentioned aqueous solution and if necessary an oil, emulsifying agent or seasoning, etc. are added and homogenized therewith. |
