PURPOSE: A process for producing a composite fatty confectionery constituted of a porous food such as baked cake and a fatty confectionery such as chocolate, which is provided for confectionery excellent in flavor and palatability. CONSTITUTION: A process for producing a composite fatty confectionery comprises immersing a porous food in a fatty confectionery in a molten state, deaerating the resulting porous food under a reduced pressure, and bringing the food to normal pressure to thereby impregnate the food with the confectionery.
