PURPOSE: A water-soluble lipid composite containing a basic amino acid and its preparation method are provided, to convert a highly functional unsaturated fatty acid into a water-soluble lipid applicable to various uses. CONSTITUTION: The water-soluble lipid composite is prepared by reacting a highly functional unsaturated fatty acid having 16-24 carbons and 1-6 double bonds with an amino acid, and is characterized by the intense peaks at 1560 cm¬-1 and 1395 cm¬-1 which represent the characteristic peak of COO- in a salt state. Preferably the unsaturated fatty acid is at least one selected from the group consisting of γ-linolenic acid, γ-linolenic acid, oleic acid, elaidic acid, linoleic acid, conjugated linoleic acid, docasahexaenoic acid (DHA), eicosapentaenoic acid (EPA) and arachidonic acid; and the basic amino acid is arginine, lysine or histidine. |
