The subject of the invention is a process for premoulding pressed cheeses and an installation for its implementation. The process comprises the following steps: a) the said parallelepipedal loaf 2 is first placed in a chute 3, b) the loaf is transferred, along an axial movement of the chute, into a cylinder 4 perforated over its entire surface, c) the loaf is maintained for some time in a slightly compressed state, in the cylinder so that it takes up its shape, d) the loaf having taken the cylindrical shape is expelled from the cylinder along an axial movement by one of the ends of the cylinder and then cut into pieces; advantageously, the expulsion of the loaf is performed by a piston 6 mounted at the end of a jack rod 8, the tube being horizontal. <IMAGE>
