FIELD: food industry. ^ SUBSTANCE: invention refers to process of manufacture of canned compotes. The method consists in preparing recipe components, in cutting and drying of yacon in SHF field, in roasting, crumbling and extracting of yacon with drink water at specified parametres of the process, in filtering of produced extract, in preparing syrup on base of the extract, in pre-packing quince and syrup, in hermetic sealing and sterilisation of a can. ^ EFFECT: facilitating production of compote with coffee taste and aroma nuances on base of non-coffee recipe, simplification of process and reduction of boiled parts of fruit in desired product while maintaining its shelf life. ^ 1 tbl |
