<p>A brine injection machine comprises injection needles mounted on a frame and spring-loaded so that in the rest position they are withdrawn and in the advanced position they are pressed down to pierce a piece of meat conveyed beneath them; the point region of each needle has a number of outlet apertures to permit brine to leave the hollow needle and enter the meat. Each needle, when in the withdrawn posn. has this perforated region housed in a cylindrical passage which fits closely around it and prevents or at least inhibits escape of the brine from the needle.</p> |
