1390808 Frozen avocado BRITISH OXYGEN CO Ltd 18 July 1973 [31 July 1972] 35618/72 Heading A2D A method of preserving a piece of avocado comprises applying an anti-oxidant to the piece, freezing the piece by cooling it firstly with cold vapours from a liquefied gas and then with the liquefied gas itself and vacuumpacking the frozen piece in a flexible film. The avocado may be garnished prior to freezing. The avocado piece is preferably dipped into the anti-oxidant, which may be an aqueous solution of ascorbic acid and sodium chloride. The liquefied gas may be directed on to the piece in the form of an atomised spray. |
