摘要 PURPOSE:To obtain processed entrails readily cookable simply by thawing and heating, by separating entrails from carcass meat, thoroughly washing the entrails, treating the washed entrails with boiling water, slowly cooling the entrails, cutting the cooled entrails, seasoning the cut entrails with a seasoning at the same temperature as that of the entrails, then freezing the seasoned entrails, hermetically sealing the obtained entrails in a fire-resistant container, etc. CONSTITUTION:Entrails are separated from carcass meat of cattle, pig, etc., and the resultant entrails (M) are washed in a washing tank 1 while stirring with water at 13-18 deg.C for >=20min to remove foreign materials, e.g. dirt, sticking material, etc., contained in the entrails. The resultant entrails are then boiled in hot water boiling in a boiling treatment tank 6 for >=30min to separate the entrails (M) and hot water. The separated entrails (M) are subsequently cut with a cutting device 11 while being slowly cooled or slowly cooled and then cut. The separated entrails (M) are then seasoned by adding a seasoning heated at about the same temperature as that of the entrails to the cut entrails (M) while stirring with a blending device 13 or adding a seasoning heated at about the same temperature as that of the entrails to the cut entrails (M) and stirring. The seasoned entrails in a separated state of a given amount are frozen and hermetically sealed in a fire-resistant container or the given amount is hermetically sealed in the fire-resistant container and frozen to process the entrails.
